But anyways, I made muffins. They're in the oven right now, but the dough turned out okay. Well, not okay. It's absolutely gorgeous. So pretty ^.^
It smells really good too. Not the dough, the kitchen. The whole house smells like apples and cinnamon.
That's right.
I made apple muffins.
Got a problem with that?
They were supposed to be strawberry, but I only had four left.
You can't make muffins from four strawberries.
Anyways, these muffins took longer muffins usually should.
10 minutes went to spooning out the vanilla sugar in to the measuring cup. (Trust me, there was no way around this.) Another 10 minutes for scraping vanilla seeds. Two an a half minutes for getting the butter the way I wanted it while it was still in the microwave. Also, I did this:
I hope it turns out okay. I improvised a lot of the recipe.
I don't even know how much apple I used.
And I substituted butter for oil. Half melted butter.
Don't ask why.
And no, that was not out of laziness.
Also, while cutting the apples, my brain decided to slice the apples before peeling them.
Smart move.
I took about half an hour cutting those apples.
The muffins are out of the oven.

And they're really good. It's moist and not too sweet. Probably because I reduced the sugar. It's got quite a fine crumb, not like most muffins.
And I lost my camera, so no pictures.
Recipe:
Apple Muffins
Adapted from Marissa Pinon
Cream together:
Cream together:
· 1 1/2 cups sugar

2 eggs
·
1 cup half-melted butter
·
1 vanilla bean
Sift:
·
3 cups flour
·
1 teaspoon salt
·
1 teaspoon baking soda
·
1 tablespoon cinnamon
Prepare:
·
3 cups peeled, cored,
diced apples (around 3 apples)
·
Brown sugar for topping
(around 1/2 cup)
Preheat oven to 350 degrees and line muffin pan with paper liners.
Cream together sugar, eggs, oil (butter), and vanilla. Sift flour, baking soda, salt, and ground cinnamon (I never sift and they turn out fine). Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.
Fill paper liners almost to the top, about 3/4 of the way full. Sprinkle with brown sugar.
Bake at 350 degrees for 20-24 minutes. Makes 18 muffins.
